Googled "stepper torque current". First result: Minebea info page:

Performance Factors
Torque is proportional to the winding current and the number of turns of wire. To increase torque by 20%, increase the current by about 20%. To decrease the torque by 50%, reduce the current by 50%.


Minebea is a Japanese manufacturer of stepper motors among other things so I'd say that counts as an authoritative source.

Thanks; but what I really want to see is a mathematical description of the physics involved and/or a graph based on actual measurement.
